Yesterday the weather turned. One night it’s hazy and warm, and everyone is celebrating an extended summer and the next morning I’m regretting not digging out a wooly hat and gloves for my walk to work. Then the rain. Damp coats and soggy shoes. Cursing the fact that I have yet again left my umbrella in my other handbag. But with all this comes curling up on the sofa watching movies, falling leaves and wellington boots. And my favourite, hot chocolate and marshmallows. Homemade marshmallows are simple to make and far superior to the store bought equivalent, as they lack the dry chalky quality that comes from artificial storage methods. Once you learn the basic method it’s easy to customise them to any colour or flavour you fancy. This recipe uses leftover pumpkin pie ingredients to create an autumnal spin on the classic sweet.
