How is it that sometimes, despite your best effort to stay cheery, no matter how good a weekend you’ve had, Monday mornings still manage to drag you down?
This weekend was perfect. Each day was punctuated by short, early afternoon social engagements which allowed for long lazy mornings, and enough of the afternoon left to break out my easter present from my parents.
One of the things that I love about where I live (and the list is pretty short) is that if you walk for 5 minutes in either direction when you leave my front door you can either end up in the city centre or in the middle of uninterrupted countryside.
Mix this with an infectiously enthusiastic health nut – I don’t think she would call herself that but in my book anyone who exercises regularly and doesn’t spend the entire time complaining about it AND eats vegetables for lunch rather than chocolate and crisps is a health nut – and you may find yourself going for a 6 mile walk and enquiring about local tennis facilities on a sunny Sunday afternoon.
Add to this two lovely emails this weekend and I came into work with a massive smile on my face. Both emails were thank yous from the lovely ladies I baked for last weekend, one confirming her flavour choices for her wedding cake and the other from my foodie pen pal.
For those of you who don’t know about the food pen pal scheme I will be going into it in further detail next Monday, but I couldn’t help but share a few pictures I took of the package I sent now that I know it won’t be spoiling Emma’s surprise.
I’m not posting the recipe (it’s here for those who want to try it) for the brownies as it belongs to another blogger, the lovely Kathryn over at Londonbakes, and I copied it ingredient for ingredient (apart from a couple of handfuls of chocolate chips I threw in for good luck). I can’t recommend it highly enough. I’ve only made brownies once before and they went very wrong, but these turned out perfectly first time and were so delicious I nearly didn’t send them!
