
I have always been more of a film girl. I rarely put music on in the background whilst I do work, I usually put a mindless movie on. Between Sky Movies, and the two weeks’ free rentals at Blockbuster, my knowledge of mainstream cinema is becoming almost encyclopedic, though very few I’ve seen recently would I actually recommend (side note – I did really enjoy Friends With Benefits).
Back to the cupcakes, I experimented a bit with the ingredients of these, substituting butter for ‘Trex’. I was a little dubious to begin with, as solidified vegetable oil doesn’t sound all that appealing, but I am now a through and through convert.
Due to the lack of water content you can use 20% less Trex than you would butter, it’s better for you, and as it is pure white and flavour free it is perfect for colouring and flavouring. It even works in icing, which comes out a beautiful bright white.

makes 12
125g self raising flour
125g caster sugar
2 eggs
100g trex
2tsp vanilla extract
Preheat oven to 180C
Place all the ingredients in a mixing bowl and using an electric whisk blend until combined.
Spoon into cupcake cases, and bake for 15 minutes, or until light brown and an inserted skewer comes out clean.

One thing is I would be careful about thinking veg oil is healthier than butter – most new research is actually showing it to be a LOT less healthy (I know!) – but then if you prefer to bake with it, and baking is more your thing than health stuff, obv stick with it!

I’m not surprised about the veg oil, I was a little dubious myself, being completely honest I hadn’t really looked into the health benefits of trex, I was going on the promotional info on the packet! I generally think if you want something healthy and sweet eat a banana, if you want cake, just eat it in moderation!
I don’t think I would have handled the pressure if I didn’t have the support of my wonderful boyfriend, who took care of all the cleaning tasks so I could concentrate of cutting out the icing!
