I had a lot of hopes riding on these cupcakes, which is never a good way to start, as they were for the friend that advised me to start this blog. It’s not surprising that they were the worst batch so far. The idea was to make a cupcake version of Neapolitan ice cream, which entailed making chocolate, strawberry and vanilla versions of both the sponge and the icing (thank you wonderful boyfriend for doing triple the amount of washing up to clear up the excess mess this process took).
The two main issues were firstly the unfortunately mild flavourings of the sponges, which meant that they ended up only tasting of sweet cake rather than the traditional trio of flavours. The second was the hastily done colouring which left the chocolate sponge looking reminiscent of muddy water and the strawberry sponge looking nearly neon.
More haste, less speed.
